The rolling action breaks the cell walls of the leaves, allowing the enzymes and other flavor &#8211; related compounds to come into contact with oxygen. It&#8217;s a natural chemical reaction that occurs when the enzymes in the tea leaves react with oxygen in the air.<\/p>\n<p>After rolling, the crushed leaves are spread out on trays in a controlled environment. The humidity and temperature are set just right to encourage the oxidation process. Typically, we keep the temperature around 25 &#8211; 30\u00b0C (77 &#8211; 86\u00b0F) and a high humidity level of about 90 &#8211; 95%.<\/p>\n<p>As the leaves oxidize, they turn from green to a coppery &#8211; brown color. The longer the oxidation process, the darker and stronger the tea will be. We carefully monitor the process to make sure the oxidation is just right. If it&#8217;s too short, the tea will be more like a green tea, with a lighter color and flavor. If it&#8217;s too long, the tea can become bitter and lose some of its delicate nuances.<\/p>\n<p>For a traditional black tea, the oxidation can take anywhere from 2 to 4 hours. But we can also adjust the time depending on the specific flavor profile we&#8217;re going for.
